FIG AND WALNUT SCONES
Fig and Walnut scones
Ingredients:
250g self raising flour
1 tsp baking powder
50g butter
75g walnuts
75g chopped dried figs
50g demerara sugar
150ml ish of milk
Beaten egg
Method:
Add the baking powder to the flour and mix together in a bowl
Rub the butter into the four until it has disappeared into a sandy mix
Stir in the chopped figs and walnuts. Use your hands again to stop them clumping and disperse them evenly through the mix
Stir in half the sugar, and save the rest to sprinkle on the top.
Add the milk, a little at a time so the dough isn’t too sticky. Mix in with a cutlery knife until you have a smooth dough that you can turn out and shape on your worktop.
Shape a thick disc of dough about the depth of your first thumb knuckle and then cut it into six pieces. Shape isn’t important. Go rustic!
Put them on a baking tray that you have lightly dusted with flour to stop them sticking. Brush each shape with egg yolk, sprinkle with the remaining sugar and top each one with half a nut. Pretty!
Bake in the oven at about 200 degrees for about 15 mins until golden brown.
